Shank In Clarified Butter Over Risotto

  • Sear Casa shank until golden brown
  • Add clarified butter to pan, (you can use chicken stock as a substitute.) Fill to About 3/4 up the side of the shank.
  • Add whole garlic cloves.
  • Cover and place in oven. Bake at 225 degrees for 4 hours.
  • Make risotto or standard rice.
  • Serve.
